Nice to hear from you, and hope you're feeling better!

Here's the only recipe my mom ever taught me, but it's become a crock-pot classic in our household:

No-Brainer Pot Roast

4 large carrots and/or parsnips, scrubbed and cut into large pieces
4-6 small-to-medium potatoes, scrubbed
Beef chuck roast, 2-3 pounds (depending on the size of your crock-pot)
1 can cream of mushroom soup
1 can cream of celery soup
1 envelope onion soup

Place the vegetables on the bottom of the crock-pot. Put the pot roast on top of the veggies, and then pour the contents of both cans and the envelope over the top. Cover and cook. Woo hoo!

Hi Jennifer-
I will submit an awesome Italian Beef Crock-pot recipe from Amy, but right now I am too lazy to go downstairs and get it. It's really easy, but great. I am also writing to let you know I finally have an e-mail address, listed above. Hope to hear from you soon.
