Crock-Pot recipes
For my birthday last year, my sister gave me the Better Homes and Gardens Biggest Book of Slow Cooker Recipes. I’m not much of a cook - my usual mode is to pop something in the microwave (though I do occasionally like to make desserts from scratch). So, for months the book sat in my kitchen, looking nice but not contributing to my meals in any way. Then a few weeks ago I decided I should start trying out some of the recipes.

Crock-Pot cooking is kind of fun - you do all the easy parts of preparing a meal from scratch: chopping and measuring. But you don’t have to worry about how hot the pan should be, how long this or that should stay on the heat, getting splattered by hot oil, coordinating multiple pans of ingredients, etc. You just dump everything in the Crock-Pot, turn it on low or high, and leave it several hours to do its thing.
So far, the recipes I’ve tried have been the Pork Roast with Apricot Glaze, the Beef Curry with Fruit, and the Creamy Curried Vegetable Soup (my favorite so far, even though there’s no meat). Next I think I’ll try the Coconut Sweet Potatoes with Pecans. There are so many different recipes in here, it would take forever to try them all. My goal is to keep trying new recipes without repeating any of them, making notes as I go as to which I like best.

Here’s the only recipe my mom ever taught me, but it’s become a crock-pot classic in our household:
No-Brainer Pot Roast
4 large carrots and/or parsnips, scrubbed and cut into large pieces
4-6 small-to-medium potatoes, scrubbed
Beef chuck roast, 2-3 pounds (depending on the size of your crock-pot)
1 can cream of mushroom soup
1 can cream of celery soup
1 envelope onion soup
Place the vegetables on the bottom of the crock-pot. Put the pot roast on top of the veggies, and then pour the contents of both cans and the envelope over the top. Cover and cook. Woo hoo!

Hi Jennifer-
I will submit an awesome Italian Beef Crock-pot recipe from Amy, but right now I am too lazy to go downstairs and get it. It’s really easy, but great. I am also writing to let you know I finally have an e-mail address, listed above. Hope to hear from you soon.
